- a total of 23 smoked turkey wings (roughly 2.5 lbs)
- 3 pounds Collard greens (enough for three brunches – stemmed and sliced into 1′′ pieces)
- 14 cup vegetable oil
- 2 tablespoons sugar
- 12 tablespoon crushed red pepper flakes
- freshly ground black pepper and salt
- distilled white vinegar
- Tabasco

- Begin by immersing your turkey wings in water in your pot. Bring it to a boil. Reduce the heat to medium-low and leave it to simmer for 1 hour.
- Add your collard greens, oil, sugar, pepper flakes, and salt & pepper to taste after that. Make sure to thoroughly mix everything. Return the pot to a high heat to bring it to a boil, then reduce to a medium low heat to keep it simmering. Simmer for about 15 minutes, or until the greens are soft.
- Remove the turkey wings from the pot and separate the flesh and skin from the bones. The turkey can then be chopped into small pieces and the bones removed.
- Return the meat and skin to the collard greens and season to taste with salt, pepper, vinegar, and Tabasco.
- Scoop collard greens and liquid into separate bowls.
- To mop up the juices, serve with corn bread on the side!
