Cooking Greens with Smoked Turkey

Collard greens with smoked turkey wings are another favourite classic African-American meal. This is another very simple recipe that is not only flavorful but also nutritious!

If you wish to smoke your own turkey, I have a separate blog post explaining the finest wood for smoking your turkey, so be sure to read it!

You will need the following ingredients for this recipe:

  • a total of 23 smoked turkey wings (roughly 2.5 lbs)
  • 3 pounds Collard greens (enough for three brunches – stemmed and sliced into 1′′ pieces)
  • 14 cup vegetable oil
  • 2 tablespoons sugar
  • 12 tablespoon crushed red pepper flakes
  • freshly ground black pepper and salt
  • distilled white vinegar
  • Tabasco

  • Begin by immersing your turkey wings in water in your pot. Bring it to a boil. Reduce the heat to medium-low and leave it to simmer for 1 hour.
  • Add your collard greens, oil, sugar, pepper flakes, and salt & pepper to taste after that. Make sure to thoroughly mix everything. Return the pot to a high heat to bring it to a boil, then reduce to a medium low heat to keep it simmering. Simmer for about 15 minutes, or until the greens are soft.
  • Remove the turkey wings from the pot and separate the flesh and skin from the bones. The turkey can then be chopped into small pieces and the bones removed.
  • Return the meat and skin to the collard greens and season to taste with salt, pepper, vinegar, and Tabasco.
  • Scoop collard greens and liquid into separate bowls.
  • To mop up the juices, serve with corn bread on the side!
