Choose beets that are undamaged, solid but delicate to the touch, and not squishy or mushy.

- There’s no need to peel the beets before roasting them; once cooked, their skins simply rub off with gloves or a paper towel.

- Line a rimmed baking sheet with foil – Place the foil-wrapped beet packs on a foil-lined baking sheet. This adds an extra layer of protection in the event that any beet juice leaks.
- Roast at 400°F for about an hour, or until a skewer slips easily into the middle with little resistance. (If your beets are really little, check after 30 minutes.) You don’t want the bottoms to dry out or burn.)
- When the beets are cool enough to handle, remove the skins and trim the stems and root ends. If not, use a vegetable peeler with caution.
How to Keep Roasted Beets Fresh
Once roasted, cooled, and peeled, you may keep them whole or slice them up and store in an airtight container in the refrigerator for up to a week. They also keep well in the freezer for several months. Place them in freezer-safe storage containers after quartering, slicing, or diceing them.
