You can also make twice the keto marshmallow fluff and keep it in the refrigerator. You’ll have the ideal low-carb dessert topper in your fridge for up to a week this way.

Ingredients Required

Despite the fact that low-carb marshmallow fluff may appear to be unattainable, this keto recipe is incredibly simple and quick. You’ll just need four ingredients to prepare it. All of them are available at any grocery shop.

Here’s everything you’ll need to make this low-carb marshmallow fluff recipe:

Make certain that the gelatin you use is unflavored and sugar-free. I almost always use Knox gelatin.

Powdered sweetener: My favorite powdered sweetener with erythritol is powdered monkfruit sweetener with erythritol, therefore I used it in this recipe as well. However, if you don’t have such a sweetener on hand, allulose powder can be used in its instead.

Sugar-free honey: I used Wedderspoon raw Manuka honey, but you may use whatever honey brand you choose.

Water: You’ll need some hot water to dissolve the gelatin and some more to produce the hot sweetener syrup.

That’s all. You may also add a teaspoon of vanilla extract to the sweetener syrup if you enjoy the flavor of vanilla.

Making Keto Marshmallow Fluff

Before you begin creating this marshmallow fluff, there is one more thing I must mention: handmade marshmallow fluff produced with gelatin will differ significantly from typical marshmallow fluff. It’s a good substitute, but the overall flavor is much different.

You’ll need a hand mixer, a big mixing bowl, and a saucepan to make this marshmallow cream. After you’ve gathered all of your ingredients, you can proceed to the main event: preparing this delectable vegan marshmallow fluff.

Let me take you through the essential phases of the cooking procedure:

Combine the gelatin and boiling water. Simply pour the gelatin packet into a big mixing basin, add the boiling water, and whisk.

Prepare the sugar syrup in a saucepan over high heat. To begin, combine the powdered sweetener, honey, and the remaining water in a saucepan. Then, set the pot to medium heat and wait for everything to come to a boil. Stir the sauce occasionally and bring it to a boil for a minute.

Create the fluff. Prepare your hand mixer and whisk everything together over medium heat while gently adding the hot syrup into the gelatin mixture. The marshmallow fluff should take roughly 6 to 8 minutes to create.

If you notice that the fluff has become too firm when mixing, place it in the microwave for 10 seconds. Then either serve or continue to beat till required.

Ideas for Serving

This handmade marshmallow crème goes well with almost any keto treat. Here are a few of my favorite alternatives that I think you should try:

  • Top your keto muffins with the marshmallow fluff.
  • Serve with fresh fruit or berries.
  • Serve it as fondue with brownies
  • Serve alongside protein pancakes.
  • Use it to make an ice cream sundae.
  • Place these keto syrnikis on top.

Alternatively, you may sandwich it between two keto crackers and enjoy it as a fast snack.

Instructions for Storing

If you have any leftover keto marshmallow fluff, store it in an airtight jar in the refrigerator. You may keep them in this manner for up to a week. Then, anytime you’re ready to serve it, pop the marshmallow fluff into the microwave for around 30 seconds. If it becomes too watery, use a hand mixer to beat it for a minute or two until it reaches the appropriate texture.

I do not advocate freezing the low-carb marshmallow fluff since it will lose its texture totally and there is nothing that will help recover it. So making fresh keto marshmallow fluff is much simpler.
