Before you begin creating this marshmallow fluff, there is one more thing I must mention: handmade marshmallow fluff produced with gelatin will differ significantly from typical marshmallow fluff. It’s a good substitute, but the overall flavor is much different.
You’ll need a hand mixer, a big mixing bowl, and a saucepan to make this marshmallow cream. After you’ve gathered all of your ingredients, you can proceed to the main event: preparing this delectable vegan marshmallow fluff.
Let me take you through the essential phases of the cooking procedure:
Combine the gelatin and boiling water. Simply pour the gelatin packet into a big mixing basin, add the boiling water, and whisk.
Prepare the sugar syrup in a saucepan over high heat. To begin, combine the powdered sweetener, honey, and the remaining water in a saucepan. Then, set the pot to medium heat and wait for everything to come to a boil. Stir the sauce occasionally and bring it to a boil for a minute.
Create the fluff. Prepare your hand mixer and whisk everything together over medium heat while gently adding the hot syrup into the gelatin mixture. The marshmallow fluff should take roughly 6 to 8 minutes to create.
If you notice that the fluff has become too firm when mixing, place it in the microwave for 10 seconds. Then either serve or continue to beat till required.

Instructions for Storing
If you have any leftover keto marshmallow fluff, store it in an airtight jar in the refrigerator. You may keep them in this manner for up to a week. Then, anytime you’re ready to serve it, pop the marshmallow fluff into the microwave for around 30 seconds. If it becomes too watery, use a hand mixer to beat it for a minute or two until it reaches the appropriate texture.
I do not advocate freezing the low-carb marshmallow fluff since it will lose its texture totally and there is nothing that will help recover it. So making fresh keto marshmallow fluff is much simpler.
