Substitutes for Rice Wine Vinegar
(in descending order of preference)
1. Vinegar de Champagne
Champagne vinegar is the closest match. It, like rice wine vinegar, is less abrasive than other wine vinegars.
2. Vinegar of White Wine
Another viable option. Most brands are harsher and stronger than rice vinegar, so if substituting, I would use somewhat less.
3. Vinegar of Apple Cider
It imparts a significantly richer, fruitier flavour. In terms of acidity, this is an excellent match.
4. Sherry Vinegar
It has a stronger flavour than rice vinegar, which may not be a bad thing! The acidity profile is similar.

5. Vinegar of Red Wine
Unless prepared from scratch, red wine vinegar has the strongest and harshest flavour. If substituting it for rice vinegar, start with less and add more as needed.
6. Lemon or lime juice
Citrus juices are based on citric acid, whereas all of the wine vinegars mentioned above are based on acetic acid. Citrus juice, on the other hand, has a completely different flavour character.
If you don’t have any vinegar on hand, a squeeze of lemon or lime will provide freshness and bring the other flavours of your food to life in the same way that vinegar does. You could even appreciate the flavour variations!
